Sydney Harbour Marriott has been a longstanding Sydney institution for 28 years. With the growth in hospitality around the Quay area, Marriott decided it was time to step-up their game and offer hotel guests, as well as Sydney locals, world class dining. Silvester's is a 120 seat restaurant with a focus on sustainable sourcing and local fare.

Every establishment has a unique story. Silvester's is inspired by the rich history of it's very space. In decades gone by, one of Sydney’s finest butchers, the Silvester Brothers, served up local cuts from the same plot. Like a phoenix rising from the ashes, Silvester's has been reborn, honouring the tradition that goes before, in a contemporary, yet classic style.
